The milking cows that produced the cheese had to graze on both fresh grass and hay in order for it to bear the Pamigiano Reggiano designation, as stipulated by the DOP certification. Parmigiano Reggiano cheese is made in the provinces of Parma, Reggio Emilia, Modena, Bologna, and Mantua, which is why those provinces are mentioned in the cheese's name.

 

What is the tasting profile of Parmigiano Reggiano?
