The bread in history
Wheat is the plant species with which humans began to master nature and manage their environment. We know that Mesolithic men (12,000 BC - 7,000 BC) ate cereals in Mesopotamia (Near East): they chew their picking of raw or grilled spelled or starch seeds.
The first mill was a flat stone to spread the grain and a large round pebble held in both hands to crush it. By reducing the grain to flour, man invented a way to make porridge from it, then into pancakes. In 8000 BC, it is known that the Sumerians who live on the banks of the Tigris and Euphrates (present-day Iran and Iraq) made several kinds of cooked cereal cakes - barley, wheat, spelled, millet, oats. … - by placing them on the walls of the ovens. They enrich the dough with fat, eggs or honey. The Sumerian civilization knows, in 3000 BC. AD, a period of agricultural prosperity due to the invention of the plow.
In 1890, Auguste Mariette discovered the tomb of Ty (5th dynasty - 2514/2374 BC), on the site of saqqara, in Egypt in which we find the first iconography of a baker (called reteh) as well as of leaven, called hesa. We then see the appearance of the first corporations identified as “bakers” and “pastry chefs”.
During the conquests of Alexander the Great (356/323 BC), bread made its appearance among the Athenians who adored it.
The Greeks ferment the dough by adding soda or grape juice to it. Their breads are generally round, but they also know how to sculpt the dough according to their inspiration. In 300 years BC. AD, appear the first bakeries in Rome (called pistorias). The bakers are of Greek origin and the craft is hereditary; heavy fines penalize sons who do not want to succeed their father.
Moreover, the Greeks taught the Romans the use of brewer's yeast in 200 BC. The Romans improved the mill system using the force of water in 100 BC. BC: large wheels plunged into the current drive the grindstones.
Jesus Christ sanctifies the bread which becomes the symbol of his immortal body. The holy scriptures of the Christian religion and its prayers contain many references to bread.
