From the region of Nord-Pas-De-Calais in France, Mimolette cheese is one of the most emblematic cheeses from the hexagone country. Famous with its very orange color, enjoy this cheese brought to you in Metro Manila Philippines.

 

A bit of history

Mimolette is a typical cheese of Nord-Pas-de-Calais in France. Indeed, it was born under Louis XIV when the import of Dutch cheeses was prohibited. The French then made this cheese in the image of edam,  it is also known as Boule de Lille after its city of origin, or vieux Hollande as inspired by the Dutch cheese. Moreover, its orange color comes from annatto, it was intended to differentiate the two cheeses.

 

How is Mimolette made?

The mimolette is made from cow's milk, with an uncooked pressed paste, the rind of which is brushed off at the end of ripening. It is very rarely coated with paraffin. The color of its orange flesh comes from a natural dye called annatto.

Today, with the industrialization of production, coloring dough with carotene gives it its orange color. It weighs on average 2 kg and measures about 20 cm in diameter.

 

What is the tasting profile of Mimolette?

Its texture ranges from soft to firm and brittle depending on its age. Its flavor is slightly salty its taste is sweet and buttery when the mimolette is young then becomes more persistent with aromas of roasted hazelnuts as it matures.


What wine to pair with Mimolette?

To pair with a Mimolette a good choice would be a fruity dry white wine such as a burgundy for example such as Laforêt Bourgogne chardonnay, but also as this one is a particularly young cheese it would go well with a light red wine, à Pinot Noir is a good idea, try our Laforêt Bourgogne Pinot Noir.
