About the Haute vallée de l’Aude
In the Aude department of the Languedoc-Roussillon region, wines from a region in the foothills of the Pyrenees are referred to as having the IGP designation Haute Vallée de l'Aude. In comparison to these AOC-level appellations, the IGP offers winegrowers a greater selection of grape varietals and vinification methods in an area roughly corresponding to the Limoux and Malepère vineyards.
Nevertheless, the classification has a somewhat small list of allowed grape varietals by IGP standards. For this region of southern France, this is quite unusual.
 
Tasting notes
Vibrant ruby hues gleam out of the glass. The first notes on the nose are of crushed blueberries which then develop on to the reveal an intriguing bittersweet character of crème de cassis with a touch of underlying parma violets. Fine red-fruits fill the mouth, along with raspberries and a touch of dark chocolate truffle.
 
What to pair with Les Volets Malbec?
Les Volets malbec will go very well with grilled beef and lamb, and also meat in sauce dishes. You can also enjoy it with terrines (cold cuts). With cheeses we would recommend to go for a soft blue cheese with not too strong flavors such as Bleu D'Auvergne.
