How is Coppa made?

Coppa is made exclusively with the head of the pig. tt is a triangular shapes piece located next to the loin at the base of the skull and shares the same muscles with the back. Then, sea salt is added to season it as well as pepper and garlic. Finally it is cellar matured for a minimum of 6 months before being sold.

 

What is the tasting profile of Coppa?

Coppa is a firm charcuterie with lots of character. Its beautiful red color testifies to its complex aromatic bouquet. Its texture varies from dry to supple depending on the ripening. It is characterized with an intense and prolonged taste on the palate. The marbling is exceptional and skillfully distributed within the reddish flesh that has different shades, and there is a delicate touch of pepper, which adds grace. Coppa is balanced and easy on the tongue, capable of conquering any palate with its enveloping and refined flavour. Pleasant and very fragrant, the meat retains a nice smoothness in the mouth.
