About Pierre Paillard

A reputable grower-producer from Bouzy, a Grand Cru village famed for producing the best Pinot Noir in all of Champagne. The vineyards were founded in 1768 by Antoine Paillard, and they are still owned by that same family. Eight generations later, brothers Antoine and Quentin are in charge of the estate. Winemaking is as natural as possible, and farming is organic. All wines are produced using natural fermentations, have a low dosage, and are full-bodied and well-balanced. La Grande Récolte, the estate's finest cuvée, is a 55% Pinot Noir and 45% Chardonnay blend that has spent ten years in the cellar and is only produced during exceptional vintages.

 

Tasting notes

Les Parcelles is a precise expression of Bouzy terroir, combining a rich ripeness with chalky finesse. Harvested primerly in 2018 with 20% of reserve wines, this cuvée is composed of 70% pinot noir and 30 % chardonnay and has spent 3 years on lees before disgorgement. On the nose, it exhibits delicate citrus and ripe fruit scents along with a mineral tint, brioche notes, and hints of ginger and anise. On the palate, it is silky and well-balanced, with very little, seamless bubbles and no angular edges. It is delicate and mineral with a long, graceful finish that evokes the freshness of citrus and lemons as well as roasted flavors from aging.

 

What to pair with Champagne Pierre Paillard, Les Parcelles?

This Champagne will pair perfectly with your seafood platter, freshly chucked oysters and any fish dish. With cheese it is good to enjoy it with creamy ones, such as a Langres or a Brie.
